Recipe Directions

  1. Scatter 1kg Roma or cherry tomatoes and 2 cloves of garlic, sliced, on a roasting tray. Toss with 2 tbsp olive oil and sprinkle with salt and black pepper.
  2. Roast at 180°C for 30 minutes, until very soft, stirring once.
  3. Serve immediately on pasta with Parmesan or bottle for later use as a base for pasta sauces or pizzas.
