3 Step Chicken Burger with Sweet-Potato Chips

Recipe Ingredients

  • 2 sweet potatoes
  • 2 tbsp olive oil
  • 2 tsp chilli powder
  • ½ tsp salt
  • 500g chicken mince
  • 2 cloves garlic
  • ½ cup chopped coriander
  • ½ avocado
  • 2 tsp lime juice

Recipe Directions

  1. Cut 2 sweet potatoes into 0,5cm-thick sticks and toss onto a baking sheet with 2 tbsp olive oil, 1 tsp chilli powder and ¼ tsp salt. Roast at 180°C for 20 to 25 minutes until crisp.
  2. Mix 500g chicken mince with 2 cloves garlic, pressed, ½ cup chopped coriander, 1 tsp chilli powder and ¼ tsp salt. Form into 4 patties. Grill on medium for 12 to 15 minutes, turning once.
  3. Mash ½ avocado with 2 tsp lime juice. Place burgers on wholegrain pita slices and top with avocado, tomato, cucumber, lettuce and sprouts. Serve with chips.

EACH SERVING About 1 970kJ, 30g protein, 46g carbohydrate, 21g fat, 11g fibre, 640mg sodium.
