1 MEATBALL PIZZA
Heat a baking sheet in a 230°C oven. On baking paper, shape 450g pizza dough into a 35cm oval. Top with 1 cup Napolitana sauce, 1kg meatballs, ¼ cup mixed pickled vegetables, 2 cups cheese (Parmesan or Grana Padano) and 1/3 cup torn basil; bake for 20 minutes on a baking sheet. Serves 6.
2 MEATBALL ENCHILADAS
Mix 230g chopped tomatoes, 1 tbsp chilli powder and 500g meatballs. Fill 8 corn tortillas; put seam-side down in a baking dish. Top with 280g enchilada sauce and 2 cups cheese (a mix of Cheddar and mozzarella); bake for 30 minutes at 205°C. Serves 4.
3 ITALIAN WEDDING SOUP
On a medium heat, simmer 6 cups chicken stock, 500g meatballs and 230g endives, chopped, in a pot for 10 minutes. Stir in 2 tbsp grated Parmesan cheese. Serves 4.
4 SWEDISH MEATBALLS
Cook 1 onion, chopped, in 3 tbsp butter in a frying pan on a medium heat for 5 minutes. Stir in 2 tbsp flour; add 410ml beef stock, 2 tbsp cream and 2 tsp each lemon juice and Worcester sauce. Simmer for 7 minutes. Add 1kg meatballs and heat through. Serves 6.
5 MOROCCAN MEDLEY
Cook 1 onion, chopped, in 1 tbsp oil in a pot on a medium heat for 5 minutes. Add 800g tomato purée, 1 kg meatballs, 1 cup beef stock, 1 tbsp cumin and ¼ tsp cinnamon; simmer for 10 minutes. Serves 8.
