- 4 small apples
- 1 tsp sugar
- ⅛ tsp ground allspice
- ⅛ tsp ground nutmeg
- 8 tsp dried cranberries
- 4 tsp water
- 2 tsp light vegetable spread
- 8 tsp chopped walnuts
- Cut off top 1cm from each apple. With a melon baller, core through stem ends without breaking through bottom.
- Place in a glass pie plate; sprinkle with sugar and spices. Divide cranberries, water and vegetable spread among cavities and tops of apples.
- Cover; microwave on medium-high (70% power) for 8 minutes or until tender. Let stand, covered, for 3 minutes. Top with walnuts.
