Balsamic-glazed Pork Chops with Spinach Mash

Recipe Ingredients

  • 450g potatoes
  • 1 tbsp salt
  • 140g baby spinach
  • 1/4 cup melted butter
  • 2 tbsp brown sugar
  • 1 tbsp balsamic vinegar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 4 bone-in pork chops

Recipe Directions

In a large pot, cover 450g potatoes, scrubbed and chopped, with water. Add 1 tbsp salt, cover and heat to boiling on high. Boil for 15 minutes or until very tender, then stir in 140g baby spinach. Drain, then mash with 1/4 cup melted butter. Combine 2 tbsp brown sugar, 1 tbsp balsamic vinegar and 1/2 tsp each salt and pepper, and brush all over 4 bone-in pork chops (each about 2,5cm thick). Grill for 4 minutes per side or until cooked. Serve with spinach mash. Garnish with snipped chives.

EACH SERVING About 2 100kJ, 36g protein, 29g carbohydrate, 26g fat (12g saturated), 2g fibre, 540mg sodium.
