Ingredients
- 350g frozen French fries
- 1 tbsp vegetable oil
- 450g boneless beef sirloin
- 1 tsp ground cumin
- ¼ tsp salt
- 2 medium poblano peppers or jalapeño chillies
- 1 large onion
- ½ tsp salt
- 1 (400g) can chopped tomatoes
- 3 cloves garlic
- ¼ cup chopped coriander
- lime wedges
Directions
Cook 350g frozen French fries according to label instructions. In a 30cm frying pan, heat 1 tbsp vegetable oil on medium-high until hot. Toss 450g boneless beef sirloin, thinly sliced against the grain, with 1 tsp ground cumin and ¼ tsp salt; add to frying pan and cook for 3 minutes or until browned, stirring once. Transfer to a plate. Reduce heat to medium. To frying pan, add 2 medium poblano peppers or jalapeño chillies, seeded and thinly sliced; 1 large onion, thinly sliced; and ½ tsp salt. Cook for 5 minutes, stirring. Add 1 (400g) can chopped tomatoes, drained; 3 cloves garlic, crushed; and beef. Cook for 2 minutes, stirring. Stir in ¼ cup chopped coriander and fries. Serve with lime wedges. Serves 4. EACH SERVING About 1 780kJ, 27g protein, 29g carbohydrate, 22g fat (7g saturated), 5g fibre, 665mg sodium.
