Blender pancakes

Recipe Ingredients

  • Melted butter, for greasing frying pan
  • 1 recipe Easy Blender Batter (see flavours below)
SWEETCORN
  • 1 cup milk
  • 1 large egg
  • 1 cup mealie meal
  • 1/2 cup cake flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup canned whole-kernel corn
RAZZY BERRY
  • 1 cup raspberries
  • 1 cup milk
  • 1 large egg
  • 1 1/2 cups cake flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup raspberries
BLUEBERRY BLITZ
  • 1 cup blueberries
  • 1 cup milk
  • 1 large egg
  • 1 1/2 cups cake flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup blueberries

Recipe Directions

For faster flapjacks (without the whisk and bowl), blend the batter, add the mix-ins and get flipping.
  1. Heat a 30cm nonstick frying pan on medium until hot; brush lightly with melted butter. In batches, scoop batter by 1/4-cupfuls into frying pan. Cook for 2 to 3 minutes or until bubbles appear and edges are dry. With spatula, turn; cook for 2 minutes more.
SWEETCORN:
  • In a blender, blend 1 cup milk and 1 large egg, then 1 cup mealie meal, 1/2 cup cake flour, 2 tbsp sugar, 2 tsp baking powder and 1/2 tsp salt. Stir in 1 cup canned whole-kernel corn before cooking. Serves 4.
  • EACH SERVING: About 1 450kJ, 9g protein, 61g carbohydrate, 7g fat (4g saturated), 3g fibre, 595mg sodium
RAZZY BERRY
  • In a blender, blend 1 cup raspberries with 1 cup milk and 1 large egg, then 1 1/2 cups cake flour, 2 tbsp sugar, 2 tsp baking powder and 1/2 tsp salt. Stir in 1/2 cup raspberries before cooking. Serves 4
  • EACH SERVING: About 1 280kJ, 9g protein, 52g carbohydrate, 7g fat (3g saturated), 4g fibre, 590mg sodium.
BLUEBERRY BLITZ
  • In a blender, blend 1 cup blueberries with 1 cup milk and 1 large egg, then 1 1/2 cups cake flour, 2 tbsp sugar, 2 tsp baking powder and 1/2 tsp salt. Stir in 1/2 cup blueberries before cooking. Serves 4
  • EACH SERVING: About 1 320kJ , 9g protein, 55g carbohydrate, 7g fat (3g saturated), 3g fibre, 590mg sodium.
