Braaied Vegetable & Couscous Salad

Recipe Ingredients

Brush 2 medium red peppers, seeded and quartered; 2 portobello mushroom caps; and 2 lemons, halved, with 2 tbsp olive oil. Sprinkle with 1/2 tsp salt. Braai mushrooms over medium to hot coals for a few minutes or until tender, turning once. Braai lemons, cut sides down, for 8 minutes or until charred. Braai peppers for 6 minutes or until softened, turning once. Combine 140g rocket; 1 cup bite-sized chunks pecorino cheese (120g); 1 cup couscous, cooked; 3 tbsp olive oil and . tsp each salt and pepper. Thinly slice peppers and chop mushrooms; add to rocket along with juice from lemons. Toss well. 

EACH SERVING About 1 890kJ, 19g protein, 42g carbohydrate,

 

23g fat (7g saturated), 5g fibre, 920mg sodium.
