Bread pudding with orange-butter sauce

Recipe Ingredients

FOR THE PUDDING

  • 1 large loaf of French bread
  • 115g butter
  • 50g raisins
  • 2 cups double-thick cream
  • 2 cups milk
  • 4 eggs, beaten
  • 1 tsp vanilla
  • 200g white sugar
  • 150g brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg

 

FOR THE ORANGE-BUTTER SAUCE

  • 60g butter
  • 150g white sugar
  • ½ cup sour cream
  • 2 tbsp orange juice

Recipe Directions

1. Preheat oven to 180°C.

2. Slice French bread into 2,5cm slices. Place in a large ovenproof dish. Melt butter and pour evenly over bread. Scatter raisins over so they’re distributed evenly.

3. Combine cream, milk, eggs, vanilla, sugars, cinnamon and nutmeg. Pour the mixture over the bread and press down on the bread with a spatula until it is soaked.

4. Place bread-pudding dish in a larger roasting tray. Pour enough water into the tray to cover the bottom of the bread-pudding dish so the pudding doesn’t burning.

5. Bake for 50 to 60minutes or until light brown on top. Watch closely during the last 10 minutes of baking so it doesn’t turn dark brown – any darker and it will be dry.

6. To make the orange-butter sauce, melt butter in a small pot. Add sugar, sour cream and orange juice, and slowly bring to a boil, stirring constantly. Once the mixture is smooth, pour it over the bread pudding.
