Brinjal Hummus

Recipe Ingredients

  • 400g can of chickpeas, rinsed and drained
  • 1 large (450g) brinjal
  • 3 tbsp fresh lemon juice
  • 2 tbsp tahini
  • 1 clove garlic
  • ½ tsp each of salt and pepper

Recipe Directions

Pierce 1 large (450g) brinjal all over. Microwave on high for 10 minutes or until tender on a plate lined with paper towels, turning once. Cool. Cut in half and scoop flesh into a food processor. Add chickpeas, 3 tbsp fresh lemon juice, 2 tbsp tahini, 1 clove garlic and ½ tsp each of salt and pepper. Process until smooth. Cover and refrigerate until cold. (Makes 3½ cups.)
