Carinè’s Ouma Babsie’s Health Rusk

Recipe Ingredients

  • 1kg self-raising flour
  • 8ml baking powder
  • 10ml salt
  • 500ml muesli or bran
  • 75g raisins
  • 75g cranberries or chopped dry apple rings
  • 175g sunflower seeds
  • 150g walnuts
  • 40g coconut
  • 400g brown sugar
  • 2 eggs
  • 500ml white yoghurt
  • 500g butter, melted

Recipe Directions

1. Preheat oven to 180°C.

2. Combine all the dry ingredients in a large mixing bowl.

3. Beat the eggs and mix in the yoghurt and butter. Add the egg mixture to the dry ingredients and mix well.

4. Pour the mixture into three small bread tins and bake for 45 minutes.

5. Leave to cool in the pans, then cut into squares. Return to the now-cool oven and let the rusks dry out.
