Place 1,35kg mashed potato (we used Woolworths Frozen Mashed potato, cooked according to instructions on packet) in a pot. Add 50g butter, 125g sour cream, 1 tsp dried thyme and plenty of seasoning. Heat gently, whisking constan tly, until hot and thickened. Marble through 2 tbsp red-onion marmalade and scoop into a warmed serving dish.
EACH SERVING About 1 140kJ, 3g protein, 18g fat (11g saturated), 24g carbohydrate (4g sugars), 4g fibre.
GET AHEAD Put mash, butter, sour cream, thyme and seasoning into a pot up to 1 hour ahead (without heating). Complete recipe to serve.
