Recipe Directions

Start with 6 cups simmering home-made or good-quality chicken broth or stock and 2 cups cooked, shredded chicken. Next, pick your favourite variation below and complete the recipe (Each recipe makes about 8 cups and serves 4).

 

Classic Chicken Noodle

  • 2 cups cooked noodles
  • 2 stalks celery, chopped
  • 1 medium carrot, chopped
  • 2 tbsp chopped dill

 

Tex-Mex

  • 1 can (400g) black beans, rinsed and drained
  • 1 cup crushed tortilla chips
  • 2 tbsp lime juice
  • 1 tsp ground cumin
  • chopped coriander

 

Tortellini en Brodo

  • 260g fresh cheese
  • tortellini, cooked
  • 4 cups baby spinach
  • 2 tbsp grated Parmesan cheese

 

Coconut-lime

  • 1 can (400g) coconut milk
  • 230g sliced portabellini mushrooms
  • ¼ cup coriander leaves
  • 2 to 3 tbsp Asian fish sauce, to taste
  • ¼ cup lime juice

 

Lemony Greek

  • 120g rice pasta,
  • cooked (to make 1¼ cups)
  • ¼ cup lemon juice
  • 2 large eggs, beaten
  • 1 spring onion, thinly sliced
