Chunky Sweetpotato Soup

Recipe Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 1 medium red pepper, chopped
  • 3 cloves garlic, crushed
  • 1.5 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp ground cinnamon
  • salt
  • 1vegetable stock
  • 900g sweet potatoes, cubed
  • 2 cans (400g each) black
  • beans, drained and rinsed
  • black pepper
  • 1 Hass avocado, sliced
  • 1/4 cup fresh coriander leaves
  • lime wedges

Recipe Directions

1. In a 5 to 6pot, heat oil on medium. Add onion and red pepper, and cook for 5 minutes, stirring. Stir in garlic, cumin, paprika, cinnamon and 1/2 tsp salt. Cook for 2 minutes, stirring.

2. Add stock, potatoes, beans, 1/4tsp pepper and 2 cups water. Heat to boiling on high. Reduce heat to medium and simmer for 15 minutes.

3. Transfer 3 cups of soup to blender. Pur.e until smooth, then return to pot. Stir in 1/2 tsp salt. Serve, garnished with avocado and coriander, with lime wedges.
