- 1 tsp olive oil
- 3 slices thickcut bacon
- 1 medium shallot
- 6 large eggs
- ¼ cup milk
- 1 cup grated Gruyère cheese
- chives, to garnish
- In a 20cm ovenproof nonstick frying pan, heat 1 tsp olive oil on medium. Add 3 slices thickcut bacon, chopped (freeze briefly or snip with shears for easier cutting), and 1 medium shallot, thinly sliced; fry for 6 minutes, stirring occasionally.
- Whisk 6 large eggs, ¼ cup milk and 1/8 tsp each salt and pepper; stir in 1 cup grated Gruyère cheese. Add to pan. Cook for 3 minutes, stirring occasionally to form curds and allow runny egg to flow to the bottom.
- Bake at 190°C for 8 minutes or until the top is set. Garnish with chives. Serve with green salad.
