Crustless Quiche Lorraine

Recipe Ingredients

  • 1 tsp olive oil
  • 3 slices thickcut bacon
  • 1 medium shallot
  • 6 large eggs
  • ¼ cup milk
  • 1 cup grated Gruyère cheese
  • chives, to garnish

Recipe Directions

  1. In a 20cm ovenproof nonstick frying pan, heat 1 tsp olive oil on medium. Add 3 slices thickcut bacon, chopped (freeze briefly or snip with shears for easier cutting), and 1 medium shallot, thinly sliced; fry for 6 minutes, stirring occasionally.
  2. Whisk 6 large eggs, ¼ cup milk and 1/8 tsp each salt and pepper; stir in 1 cup grated Gruyère cheese. Add to pan. Cook for 3 minutes, stirring occasionally to form curds and allow runny egg to flow to the bottom.
  3. Bake at 190°C for 8 minutes or until the top is set. Garnish with chives. Serve with green salad.
