Dijon Pork & Asparagus Sauté

Recipe Ingredients

  • 4 thick boneless pork-loin chops (about 700g)
  • 2 tbsp chopped fresh tarragon leaves
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 450g asparagus
  • 1/2 cup dry white wine
  • 1 bunch spring onions
  • 1 tbsp Dijon mustard

Recipe Directions

Rub 4 thick boneless pork-loin chops (about 700g total) on both sides with 2 tbsp chopped fresh tarragon leaves and 1/2 tsp salt. In a 30cm frying pan, heat 2 tbsp olive oil on medium-high until hot. Cook pork for 5 minutes or until browned on both sides, turning over once; transfer to a plate. To the same frying pan, add 450g asparagus, sliced at an angle, and 1 bunch spring onions, sliced. Cook for 3 minutes, stirring. Add 1/2 cup dry white wine and simmer for 2 minutes. Stir in 1 tbsp Dijon mustard. Nestle pork into asparagus. Cook for another 2 to 4 minutes or until pork is cooked through. 

EACH SERVING About 1 900kJ, 37g protein, 7g carbohydrate, 31g fat (9g saturated), 2g fibre, 470mg sodium.
