Easiest-ever Spinach Lasagna

Recipe Ingredients

  • 450g ricotta
  • 280g frozen, chopped spinach
  • 1 cup grated mozzarella
  • 1 egg
  • ¼ tsp salt
  • 900g Napoletana sauce
  • 250g lasagne sheets
  • 1 cup grated Mozarella

Recipe Directions

  1. Stir together 450g ricotta, 280g frozen, chopped spinach, thawed and squeezed dry, 1 cup grated mozzarella, 1 egg and ¼ tsp salt. In a slow cooker, layer 900g Napoletana sauce, 250g lasagne sheets, broken to fit, and the ricotta mixture, starting and ending with the Napoletana sauce.
  2. Top with 1 cup grated Mozarella. Cover and cook on low for 4 hours or until lasagne sheets are tender.
Each Serving: About 1500 kJ, 20g protein, 37g carbohydrate, 14g fat (7g saturated) 4g fibre.
