- 3 medium eggs
- 75g caster sugar
- 50ml brandy (optional)
- 100ml full-cream milk
- freshly grated nutmeg, to garnish
- Put the eggs in a large bowl. Add sugar and beat together with an electric hand whisk for 5 minutes or until thick and resembling mousse. While still whisking, quickly add brandy, if using, then milk. Divide among 8 small glasses. Garnish with nutmeg and serve.
