- 3 ½ cups all-purpose flour
- 3 tbsp
- ¼ cup olive oil
- 1 ½ tsp salt
- 1 ¼ tsp instant yeast
- 1 ½ cups lukewarm water
- In a stand mixer with a paddle attachment, mix flour, 3 tbsp oil, salt and yeast on low speed until combined. Add water. Mix on medium for 1 minute. Increase speed to medium-high. Mix for 5 minutes.
- Meanwhile, brush bottom and sides of a large light-coloured rimmed baking tray (about 30 by 45cm) with remaining ¼ cup oil. Place dough (it will be very soft) onto the oiled tray and rub all over with excess oil. Gently stretch dough to fill most of baking tray. Cover with clingfilm; let it stand in a warm spot for 2 hours.
- Remove clingfilm. With hands, stretch and push dough until it covers bottom of baking tray. Top as desired.
