- 1 large pepper
- 1 tbsp vegetable oil
- Slice 1 large pepper horizontally to make 4 x 1cm-thick rings.
- Heat 1 tbsp vegetable oil over a medium heat, cook peppers for 2 minutes, turn and repeat.
- Crack 1 egg into the centre of each ring, cook covered until egg is cooked to your liking. Garnish, season and serve.
