Recipe Ingredients

SYRUP

  • 4 cups water
  • 2 cups sugar
  DOUGH
  • 1 cup butter
  • 1 cup sugar
  • 3 cups cake flour
  • pinch of salt
  • 3 tsp bicarbonate of soda
  • ½ cup milk
  • 2 tbsp apricot jam
  • 1 tsp ground ginger
 

Recipe Directions

1. Bring the water and sugar to the boil in a large pot. Keep aside until later. 2. Melt the butter and sugar together. Add sifted flour and salt. 3. Mix bicarbonate of soda into
the milk and add to the flour mixture. 4. Add jam and ginger, and mix. 5. Scoop
spoonfuls of dough into the boiling syrup. Keep the pot’s lid up for at least the first 10 minutes. Turn down the heat so that it just simmers. 6. Cook for
45 to 60 minutes, depending on how brown you want the pudding. (The bicarbonate of soda makes it brown.) 7. Serve with custard, cream or vanilla ice cream.   TIP: If you want the pudding to have more sauce, just add another cup of water to the syrup.
