Sugar Frosted Cupcakes

Recipe Ingredients

  • 1 cup sugar
  • ½ cup butter or margarine
  • ½ cup milk
  • 1 egg
  • ½ cup cocoa
  • ½ tsp baking soda
  • 1 tsp baking powder
  • 1½ cups sifted flour
  • 1/2 cup boiling water

Recipe Directions

  1. Put all the above ingredients in a bowl, as listed.  The egg does not have to be beaten.
  2. Stir mixture gently for about 3 minutes and put into cupcake tins and fill each cup 2/3 full of batter.  
  3. Sprinkle ½ tsp sugar over the top of each cupcake before it is baked.  No other icing is needed.  
  4. Bake at 180°C for approximately 20 minutes.
  5. DIANE'S TIP: You might have to play with the time baked and the amount of baking powder. I find the cake flour here to sometimes be a bit heavier than the American flour.
Good Housekeeping reader Diane Hacking sent us her favourite baking recipe – plus the sweet story behind it: 'I so enjoyed the recipes by your celebrity cooks in the magazine. Since you asked for recipes with a history, I dug my favourite one out for you.' Diane says, 'I was born and raised in the U.S.A. but have been in South Africa for 40 years. I found this recipe when going through some old things that I brought over with me. While I was growing up, my mom felt that school and most especially the ability to read and enjoy books was the most important thing that she could encourage me to do. At the age of 9 or 10, she subscribed to several children's magazines for me, just like Good Housekeeping for the young. Anyway, each month my favourite one would arrive and we would always try the easy recipes and I would enjoy the stories.' She also adds, 'this one was my favourite recipe and I was so proud to be able to make it by myself. It brings back great memories of my mom and a much younger time in my life… the writing on the recipe card is that of a 9 year old, so I smile as I am making these.'
