Calamari Goujon Wraps

Recipe Ingredients

  • 300g breaded calamari goujons
  • 1 little gem lettuce, leaves pulled apart
  • 1 avocado, stoned and sliced
  • 4 flour tortilla wraps

 

FOR THE SALSA

  • 2 spring onions, roughly chopped
  • 200g cherry tomatoes
  • 1 tsp capers
  • small handful fresh coriander
  • 1 tsp extra-virgin olive oil
  • salt and freshly ground black pepper

 

FOR THE SAUCE

  • finely grated zest and juice of 1⁄2 lemon
  • 2 tbsp mayonnaise
  • salt and freshly ground black pepper

Recipe Directions

1. Cook goujons according to the instructions on the packet.

2. Meanwhile, make the salsa. Pulse the spring onions in a food processor until finely chopped, then add the cherry tomatoes, capers, coriander, olive oil and seasoning, and pulse to combine. If you don’t have a food processor, finely chop the spring onions, tomatoes, capers and coriander, then stir through the oil. Check the seasoning and empty the salsa into a serving bowl.

3. To make the sauce, simply mix the lemon zest and juice, the mayonnaise and some seasoning in a small bowl.

4. Bring the salsa, sauce, goujons, lettuce leaves, avocado and tortillas to the table and let everyone assemble their own wrap.

 

EACH SERVING About 1 980kJ, 22g fat (4g saturated), 54g carbohydrate (4g total sugars), 15g protein, 5g fibre.
