Granny Van Rensburg’s famous malva pudding

Recipe Ingredients

FOR THE BATTER

  • 200g sugar
  • 1 tbsp butter
  • 1 egg
  • 250ml milk
  • 1 tbsp smooth apricot jam
  • ½ tsp salt
  • 1 tsp bicarbonate of soda
  • 1 tsp vinegar
  • 115g cake fl our

 

FOR THE SYRUP

  • 125g butter
  • 125ml cream
  • 100g sugar
  • 125ml milk
  • 1 tsp vanilla essence

Recipe Directions

1. preheat the oven to 180°C and lightly grease an ovenproof glass dish.

2. Mix the sugar, butter and egg until creamy.

3. Add the milk, jam and salt.

4. Mix the bicarbonate of soda and vinegar together in aseparate bowl, and add this to the mixture.

5. Next, add the flour and mix. Bake for 45 minutes.

6. Make the syrup while the pudding is baking. Combine the butter, cream, sugar and milk in a pot and bring to a boil. Add the vanilla essence, stir and take it off the heat.

7. Pour the syrup over the hot pudding as soon as it comes out of the oven. Serve with whipped fresh cream or cold custard.
