Grilled Chicken & Sesame Soba Salad

Recipe Ingredients

  • 4 cups cooked soba noodles
  • 2 cups sliced red bell pepper
  • 2 cups thinly sliced red cabbage
  • 1½ tbsp sliced spring onions
  • 1½ tbsp each chopped coriander and mint
  • 1½ tbsp Asian dressing
  • ¼ cup coconut milk
  • 1½ tbsp toasted sesame oil
  • ¼ cup smooth peanut butter
  • 1½ tbsp low-sodium soya sauce
  • 2 tsp rice-wine vinegar
  • 2 tsp each grated garlic and ginger
  • 85g sliced grilled chicken
  • 340g chicken

Recipe Directions

Toss 4 cups cooked soba noodles with 2 cups sliced red bell pepper, 2 cups thinly sliced red cabbage, 1½ tbsp sliced spring onions and 1½ tbsp each chopped coriander and mint. Divide evenly among 4 bowls. Dress each serving with 1½ tbsp Asian dressing: whisk together ¼ cup coconut milk, 1½ tbsp toasted sesame oil, ¼ cup smooth peanut butter, 1½ tbsp low-sodium soya sauce, 2 tsp rice-wine vinegar and 2 tsp each grated garlic and ginger. Top each bowl with 85g sliced grilled chicken. (You’ll need a total of 340g chicken.)
