Grilled Steak & Summer Potato Salad

Recipe Ingredients

  • 340g thick rump steak
  • salt and pepper
  • 3 tbsp olive oil
  • small handful of chopped chives and tarragon
  • 4 cups diced red potatoes

 

DIJON DRESSING

  • 2 tsp Dijon mustard
  • 1½ tbsp olive oil
  • 2 tsp white-wine vinegar
  • 2 tsp chopped capers
  • 2 tsp grated shallot
  • salt and pepper

Recipe Directions

Heat a gas grill to medium-high or set a grill pan over a medium-high heat. Season a 340g thick rump steak with salt and pepper. Grill for 4 to 6 minutes on each side for medium-rare. Whisk 3 tbsp olive oil with a small handful each of chopped chives and tarragon; spoon over steak. Serve with 4 cups diced red potatoes, boiled and tossed lightly with Dijon dressing.

 

DIJON DRESSING

whisk together 2 tsp Dijon mustard, 1½ tbsp olive oil, 2 tsp white-wine vinegar, 2 tsp chopped capers and 2 tsp grated shallot; season with salt and pepper to taste.
