Recipe Ingredients

  • 4 cups self- raising flour
  • 1 cup digestive bran
  • 2 tsp baking powder
  • 1⁄2 cup oats
  • 1 cup brown sugar
  • 3 cups All-Bran Flakes
  • 1 cup sunflower seeds
  • 1⁄4 cup linseeds or sesame seeds
  • 1⁄4 cup slivered almonds
  • 200g butter
  • 1 cup buttermilk
  • 125ml canola/ sunflower oil
  • 1 egg

Recipe Directions

1. Preheat oven to 170°C. 2. Mix all the dry ingredients together. 3. Melt the butter and add the buttermilk, oil and egg. 4. Pour the wet ingredients into the dry and mix. Knead gently. 5. Place the mixture into a greased roasting pan, spread evenly and press down gently. 6. Bake at 170°C until done (usually about 40 to 45 minutes). Be careful that they don’t overcook. 7. Allow to cool properly before cutting the rusks to size. 8. Preheat oven to 70°C. Spread the rusks on a baking tray and dry out slowly for about 6 hours.   TIP:  Sultanas or dried cranberries can also be added.
