Honey-soya glazed salmon with peppers

Recipe Ingredients

  • 2 large peppers, seeded and thinly sliced
  • 1 medium red onion, thinly sliced
  • 1 tbsp toasted sesame oil
  • 1/4 tsp salt
  • 3 tbsp soya sauce
  • 2 tbsp honey
  • 1 tbsp toasted sesame oil
  • 2 tsp grated peeled fresh ginger
  • 1/4 tsp black pepper
  • 4 salmon fillets (140g each)
  • 3 cups cooked brown rice
  • Fresh basil

Recipe Directions

  1. On a large rimmed baking tray, toss 2 large peppers, seeded and thinly sliced, with 1 medium red onion, thinly sliced; 1 tbsp toasted sesame oil; and 1/4 tsp salt. Roast for 20 minutes or until tender.
  2. In a 2-litre baking dish, whisk 3 tbsp soya sauce, 2 tbsp honey, 1 tbsp toasted sesame oil, 2 tsp grated peeled fresh ginger and 1/4 tsp black pepper; add 4 salmon fillets (140g each), turning to coat. Bake at 220°C for 15 to 20 minutes or until cooked through.
  3. Serve salmon with pepper mixture and 3 cups cooked brown rice. Garnish with fresh basil.

EACH SERVING: About 2 110kJ, 36g protein, 51g carbohydrate, 17g fat (3g saturated), 5g fibre
