Recipe Ingredients

  • 2 brinjals, cut lengthways into 1cm-wide strips
  • 4 tbsp olive oil salt
  • 1 onion, finely chopped
  • 500g lean lamb mince
  • 1⁄2 tsp ground cinnamon
  • 100ml white wine
  • 2 x 400g cans chopped tomatoes
  • 300ml chicken stock
  • small handful fresh parsley, chopped
  • freshly ground black pepper
  • 200g Greek yoghurt
  • 1 large egg, beaten
  • 25g Parmesan cheese, grated

Recipe Directions

1. Preheat grill to medium. Arrange brinjal slices on two large baking sheets and brush with half the oil. Sprinkle salt over. Grill each tray separately for 12 minutes, turning slices halfway through. Set aside. 2. Heat remaining oil in a large frying pan and gently fry the onion for 8 minutes, until soft. Add mince and fry until golden. Stir in cinnamon and wine, and fry for 1 minute. Add tomatoes and stock, bring to the boil and simmer for 15 minutes until thick. Stir in parsley and season to taste. 3. Preheat oven to 220°C. Stir together yoghurt, egg and cheese. 4. Spoon half the mince mixture into a 1,8l ovenproof dish and cover with half the brinjal slices. Spoon over remaining mince and top with brinjals. Pour over yoghurt mixture and spread evenly. 5.Cookintheovenfor25to30 minutes until golden. Serve with a green salad.   EACH SERVING About 2 170kJ, 35g fat (13g saturated), 14g carbohydrate (13g total sugars), 34g protein, 4g fibre.
