Lamb Sausage with Confetti Couscous

Recipe Ingredients

  • 570g Brussels sprouts, trimmed and halved
  • 1 tbsp olive oil
  • 1/4 tsp each salt and pepper
  • 450g lamb sausages
  • 1 cup couscous, cooked
  • 2 medium carrots, finely chopped
  • 2 small sweet peppers, finely chopped
  • 1/2 cup fresh mint, chopped
  • 1 tbsp olive oil
  • 1/4 tsp salt

Recipe Directions

  1. On a rimmed baking sheet, toss 570g Brussels sprouts, trimmed and halved, with 1 tbsp olive oil and 1/4 tsp each salt and pepper; roast at 245°C for 15 to 20 minutes or until browned and tender.
  2. Meanwhile, on a foil-lined baking sheet, arrange 450g lamb sausages; roast along with sprouts for 15 to 20 minutes or until browned and cooked through.
  3. Toss 1 cup couscous, cooked, with 2 medium carrots, finely chopped; 2 small sweet peppers, finely chopped; 1/2 cup fresh mint, chopped; 1 tbsp olive oil; and 1/4 tsp salt.
  4. Serve sausages over couscous with Brussels sprouts. Serves 4.

EACH SERVING: About 1 420kJ, 25g protein, 51g carbohydrate, 36g fat (13g saturated), 9g fibre, 795mg sodium.

KITCHEN NOTE: Turn Brussels sprouts cut sides down when roasting – the edges of the leaves will get super-crunchy.
