Lemon-dill chicken meatball soup

Recipe Ingredients

  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 1 small onion, chopped
  • 2 tbsp olive oil
  • 5 cups chicken stock
  • 3 cups water
  • 1 3/4 cups bulgur wheat
  • 340g chicken mince
  • 1/4 cup finely chopped fresh dill
  • 1 tsp grated lemon zest
  • 1/4 tsp each salt and pepper
  • 1/4 tsp salt

Recipe Directions

1. In a 6 to 7pot on medium, cook 2 carrots, sliced; 2 stalks celery, sliced; and 1 small onion, chopped, in 2 tbsp olive oil for 10 minutes, stirring. Add 5 cups chicken stock and 3 cups water; heat to boiling on high. Stir in 1 3/4 cups bulgur wheat. Reduce heat; simmer for 8 to 10 minutes or until bulgur wheat is almost tender.

2. Meanwhile, combine 340g chicken mince, 1/4 cup finely chopped fresh dill, 1 tsp grated lemon zest and 1/4 tsp each salt and pepper. Form chicken mixture into 2,5cm balls; add to simmering soup along with 1/4 tsp salt. Cook for 6 minutes or until cooked through.

EACH SERVING: About 1 820kJ, 22g protein, 53g carbohydrate, 16g fat (1g saturated), 9g fibre.
