Lemony Crab Linguine

Recipe Ingredients

  • ¼ cup olive oil
  • 3 cloves garlic
  • 1 tbsp fresh thyme
  • 250g large pieces crabmeat
  • 1 lemon
  • ½ tsp salt
  • ½ tsp pepper
  • 450g linguine
  • 1/3 cup sliced pickled peppers

Recipe Directions

In a frying pan, combine ¼ cup olive oil; 3 cloves garlic, thinly sliced, and 1 tbsp fresh thyme. Cook on medium for 3 minutes, stirring. Add 250g large pieces crabmeat; grated zest and juice of 1 lemon and ½ tsp each salt and pepper. Toss crab mixture with 450g linguine, cooked; ¼ cup pasta cooking water and 1/3 cup sliced pickled peppers. Serve with lemon wedges.

EACH SERVING About 2 030kJ, 22g protein, 66g carbohydrate, 15g fat (2g saturated), 3g fibre, 600mg sodium.
