Linguine with Tuna & Chillis

Recipe Ingredients

  • 340g linguine
  • 3 tbsp olive oil
  • 3 cloves garlic
  • 2 small fresh chillis
  • 2 medium baby marrows
  • 230g mixed mushrooms
  • ½ tsp salt
  • ½ tsp pepper
  • 1 can (170g) tune, packed in oil

Recipe Directions

  1. Cook 340g linguine as label directs, reserving ½ cup cooking water. Ina 25cm frying pan on medium , heat 3 tbsp olive oil; add 3 cloves garlic, finely chopped, and 2 small fresh chillis, thinly sliced. Cook for 2 minutes, stirring.
  2. Add 2 medium baby marrows, thinly sliced; 230g mixed mushrooms, thinly sliced; and ½ tsp each salt and pepper. Cook for 5 minutes, stirring. Remove from heat.
  3. In a pasta pot, toss cooked pasta, baby-marrow mixture and 1 can (170g) tuna packed in olive oil, drained, adding reserved cooking water as needed.
EACH SERVING  About 2 050kJ, 23g protein, 70g carbohydrate, 14g fat (saturated), 4g fibre, 395mg sodium.
