Recipe Ingredients

Pudding

  • 1 tbsp butter
  • ¾ cup caster sugar
  • 1 tbsp apricot jam
  • 1 egg
  • pinch of salt
  • 1 cup cake flour
  • 1 cup milk
  • 1 tsp bicarbonate
  • of soda
  • 1 tbsp vinegar

Sauce

  • 1 cup cream
  • ½ cup butter
  • 1 cup sugar
  • ½ cup boiling water
  • 5ml vanilla essence

Recipe Directions

1. Preheat oven to 180°C.

2. In a mixer, cream the butter and sugar, then add the jam.

3. Mix in the egg.

4. Sift the salt and flour together. Slowly add the milk and flour alternately to the butter and sugar mixture, mixing between each addition.

5. Lastly, dissolve the bicarbonate of soda in the vinegar and stir it into the mixture.

6. Pour into an ovenproof dish and bake for about 30 minutes until the top is browned.

7. While the pudding is baking, make the sauce.

8. Heat the sauce ingredients in a pot over a medium heat and simmer, stirring, for 5 minutes.

9. When the pudding is ready, pour the sauce over it. Serve with cream, ice cream or custard.
