Mini Wraps with Ginger and Citrus Chicken

Recipe Ingredients

FOR THE CHICKEN:
  • 1 can Nestlé Ideal Unsweetened Evaporated Milk
  • 5 tbsp lemon juice
  • ¼ cup vegetable oil
  • 3 tbsp granulated sugar
  • 2 tbsp ground dried ginger
  • ½ cup sliced spring onion
  • 1 tsp salt
  • ¼  tsp ground black pepper
  • 1 rotisserie chicken, finely shredded
FOR THE WRAPS:
  • 30g butter-lettuce leaves
  • 6 mini wraps
  • 50g slivered almonds toasted
  • fresh mint leaves, to garnish

Recipe Directions

1. Place the evaporated milk, lemon juice, oil, sugar, ginger, spring onion and salt and pepper in a large bowl. Add the chicken. Stir to combine. 2. To assemble the wraps, place a piece of lettuce on each wrap and top with some chicken mixture. 3. Sprinkle with almonds, garnish with fresh mint leaves and serve immediately.
