Mushroom Quesadillas

Recipe Ingredients

  • 1 tbsp olive oil
  • 170g mushrooms
  • 1/4 tsp salt
  • 1/2 cup salsa
  • 1/2 cup corn
  • 1 cup grated Gouda
  • 4 flour tortillas

Recipe Directions

In a 25cm frying pan, heat 1 tbsp olive oil on a medium heat. Add 170g mushrooms, sliced, and 1/4 tsp salt. Cook for 4 minutes. Stir in 1/2 cup each salsa and frozen corn. Cook for 2 minutes. Next, arrange four 20cm flour tortillas on a large baking tray sprayed with cooking spray. Divide the mushroom mix among the tortillas and top with 1 cup grated Gouda, divided. Fold the tortillas over to form half-moons and spray the tops with cooking spray. Bake in a 250°C oven for 6 minutes. Turn the quesadillas over and bake for another 6 minutes. Serve with sour cream.

EACH SERVING About 1 340kJ, 12g protein, 33g carbohydrate, 16g fat (6g saturated), 2g fibre, 960mg sodium.
