Oaty muffins

Recipe Ingredients

  • 1 cup all-purpose flour
  • 1¼ tsp baking powder
  • ½ tsp bicarbonate of soda
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • 1 cup quick-cooking oats, uncooked
  • ⅓ cup fat-free milk
  • ⅔ cup apple sauce
  • ¼ cup treacle sugar
  • ¼ cup golden syrup
  • 2 tbsp canola oil
  • 1 large egg
  • 3 carrots, grated (about 1½ cups)
  • ½ cup chopped prunes

Recipe Directions

  1. Preheat oven to 180°C. Grease 12 standard muffin-pan cups, or line cups with fluted paper liners.
  2. In a large bowl, whisk together flour, baking powder, bicarbonate of soda, salt and cinnamon. Stir in oats. In a medium bowl, mix milk, apple sauce, treacle sugar, golden syrup, oil and egg with a fork, until blended. Stir in carrots and prunes. Add apple-sauce mixture to flour mixture. Stir until flour is just moistened. (The batter will be lumpy.)
  3. Spoon batter into prepared muffin-pan cups. (Muffin cups will be full.) Bake for 23 to 25 minutes or until toothpick inserted in centre of muffin comes out clean. Immediately remove muffins from pan. Serve muffins warm, or cool on a wire rack to serve later. Reheat muffins if you like.
