Pan-roasted Salmon with Plum-cucumber Salsa

Recipe Ingredients

  • 340g fresh salmon in
  • 1½ tbsp low-sodium soya sauce and
  • 1½ tbsp low-sodium teriyaki
  • salmon
  • 1 cup diced fresh plum,
  • 1 cup diced cucumber,
  • ¼ cup diced red onion and a
  • small handful of chopped mint
  • rice-wine vinegar
  • salt
  • 4 cups salad greens
  • olive oil
  • lime juice

Recipe Directions

Heat oven to 200°C. Marinate 340g fresh salmon in 1½ tbsp low-sodium soya sauce and 1½ tbsp low-sodium teriyaki sauce for at least 15 minutes. Place salmon skin-side down in a small frying pan over a medium-high heat; cook for 2 to 3 minutes. Finish in oven for 6 to 8 minutes, depending on how you like it cooked. Mix together 1 cup diced fresh plum, 1 cup diced cucumber, ¼ cup diced red onion and a small handful of chopped mint; season salsa with a few dashes of rice-wine vinegar and salt to taste. Top salmon with salsa and serve with 4 cups salad greens dressed with olive oil and a squeeze of lime juice.
