In a bowl, combine 1/2 cup each breadcrumbs (seasoned with dried basil, origanum and parsley) and grated Parmesan. In a 30cm frying pan, heat 3 tbsp olive oil on medium-high. Dip 4 small chicken-breast halves (about 680g) into 2 large eggs, beaten, then coat with crumb mixture. Add to frying pan and fry until golden brown on both sides. Transfer chicken to baking dish. Top with 3/4 cup Neapolitan sauce and 170g mozzarella, grated. Bake in a 230°C oven for 20 minutes. Serve with crusty bread. Serves 4.
