Pasta with Lamb & Pecorino

Recipe Ingredients

  • 450g lamb mince
  • salt
  • 1 small red pepper, finely
  • chopped
  • 3 cloves garlic, finely chopped
  • 1½ tsp ground cumin
  • 1½ tsp ground coriander
  • 450g penne rigate
  • 3 tbsp tomato paste
  • 1 cup fresh mint leaves,
  • finely chopped
  • ½ cup grated Pecorino cheese

Recipe Directions

1. Bring a large covered pot of salted water to the boil.

2. Heat a 30cm frying pan on medium-high. Add mince; sprinkle with ½ tsp salt. Cook for 3 minutes or until browned, breaking up with the back of a wooden spoon. Add red pepper, garlic, cumin, coriander and a pinch of salt; cook for 3 minutes or until beginning to soften, stirring occasionally.

3. Meanwhile, cook pasta as label instructs. Reserve 1 cup cooking water; set aside. Drain pasta and return to pot. Stir in tomato paste and reserved pasta cooking water. Cook for 2 minutes, stirring. 4. Stir lamb mixture, mint and Pecorino into pasta in pot, tossing to combine.

EACH SERVING About 2 340kJ, 28g protein, 61g carbohydrate, 22g total fat (10g saturated), 4g fibre, 69mg cholesterol.
