Pea-and-mint-purée toasts

Recipe Ingredients

  • 300g frozen peas
  • ½ cup mint
  • ½ cup water
  • ¼ cup evaporated milk
  • 1 tbsp butter
  • salt and pepper to taste
  • 12 baguette slices

Recipe Directions

  1. In a saucepan, heat 300g frozen peas, ½ cup mint and ½ cup water to boiling. Cook on medium for 5 minutes or until tender, stirring.
  2. Drain.  Purée or blend with ¼ cup evaporated milk, 1 tbsp butter and salt and pepper.
  3. Toast 12 buttered baguette slices. Top with purée.
