- 300g frozen peas
- ½ cup mint
- ½ cup water
- ¼ cup evaporated milk
- 1 tbsp butter
- salt and pepper to taste
- 12 baguette slices
- In a saucepan, heat 300g frozen peas, ½ cup mint and ½ cup water to boiling. Cook on medium for 5 minutes or until tender, stirring.
- Drain. Purée or blend with ¼ cup evaporated milk, 1 tbsp butter and salt and pepper.
- Toast 12 buttered baguette slices. Top with purée.
