- 2 very ripe large bananas
- 3 large eggs
- 3/4 cup self-raising flour
- In a blender, puree 2 very ripe large bananas until smooth. Add 3 large eggs; pulse until combined. Pulse in 3/4 cup self-raising flour until just incorporated. Lightly grease a griddle or nonstick 30cm frying pan; heat on medium for 1 minute.
- Drop batter onto hot griddle as directed below. Cook crumpets for 2 to 3 minutes or until bubbles start to form and edges look dry. With a spatula, turn; cook for 1 to 2 minutes more until puffy and the underside is golden brown. (Keep warm on a baking tray in a 105˚C oven.)
TOPPINGS Garnish with whipped cream and coconut flakes for tail, and banana slices and mini chocolate chips for feet.
