Place a large baking tray in a 250°C oven. In a large bowl, toss 1 bunch asparagus, 1/2 a red onion, sliced, 2 tbsp olive oil and 1/2 tsp pepper. Stretch and roll out 450g pizza dough in a 30cm circle on a large sheet of baking paper. Top with 120g mozzarella, followed by the asparagus mixture. Remove hot tray from oven and carefully slide the pizza on the sheet of baking paper onto it. Bake for 20 to 25 minutes or until bottom and edges are a deep golden brown.
