Potato-chip Omelette

Recipe Ingredients

  • 8 large eggs
  • 3 cups potato chips (110g)
  • 1/4 cup fresh parsley
  • 1/4 tsp salt
  • 2 tbsp olive oil
  • 1 small onion
  • 1/4 tsp smoked paprika

Recipe Directions

In a large bowl, combine 8 large eggs, beaten; 3 cups potato chips (about 110g), crushed; 1/4 cup fresh parsley, chopped, and 1/4 tsp salt. In a 25cm nonstick frying pan, heat 2 tbsp olive oil on medium-low. Add 1 small onion, chopped. Cook for 8 minutes. Add the egg mixture. Stir slowly until edges begin to set, then cook undisturbed until the top is mostly set. Cover with a large lid and carefully flip. Slide the omelette back into the pan and cook for 5 minutes or until set. Sprinkle with 1/4 tsp smoked paprika. Serve with a rocket salad and baguette.

EACH SERVING About 1 530kJ, 15g protein, 16g carbohydrate, 26g fat (5g saturated), 1g fibre, 415mg sodium.
