Raw-choc & goji-berry balls

Recipe Ingredients

  • 2¼ cups pecans
  • 22 fresh dates, seeded
  • ⅓ cup raw cacao powder
  • 1½ tsp coconut oil
  • 2 tsp finely grated orange rind
  • 2 cups desiccated coconut, lightly toasted, plus extra for rolling
  • ¼ cup goji berries

Recipe Directions

  1. Add pecans to food processor and process until finely chopped. Add dates, cacao powder, coconut oil, orange rind, 3 tsp water and coconut, and process until combined. Transfer to a bowl and mix in berries.
  2. Roll tablespoons of mixture into balls and roll in toasted coconut. Transfer to a clean container and refrigerate for an hour until firm. Makes 25.
