- 2¼ cups pecans
- 22 fresh dates, seeded
- ⅓ cup raw cacao powder
- 1½ tsp coconut oil
- 2 tsp finely grated orange rind
- 2 cups desiccated coconut, lightly toasted, plus extra for rolling
- ¼ cup goji berries
- Add pecans to food processor and process until finely chopped. Add dates, cacao powder, coconut oil, orange rind, 3 tsp water and coconut, and process until combined. Transfer to a bowl and mix in berries.
- Roll tablespoons of mixture into balls and roll in toasted coconut. Transfer to a clean container and refrigerate for an hour until firm. Makes 25.
