- 1 red cabbage, core removed and finely sliced
- 250g brown sugar
- 250ml red-wine vinegar
- 200g unsalted butter, diced
- salt and black pepper
- Preheat oven to 165°C.
- Put the cabbage in an ovenproof dish and sprinkle over the sugar, vinegar and butter. Season well, cover with foil and put in the oven.
- Cook for 40 minutes and then give it a really good stir before putting it back for a further 40 minutes.
