Ricotta & greens slice

Recipe Ingredients

  • 1 bunch kale (or spinach)
  • 2 tbsp olive oil
  • 1 bunch watercress
  • 6 spring onions, sliced
  • 2 tbsp chopped dill
  • ¼ cup curly parsley
  • 1½ cups ricotta cheese
  • 4 eggs, lightly whisked
  • 150g feta cheese, crumbled
  • 10 sheets phyllo pastry
  • 100g butter, melted
  • 1 tbsp poppy seeds

Recipe Directions

  1. Preheat oven to 180°C and grease an 18cm x 26cm dish. Remove kale leaves from stems. Heat oil in a large frying pan over a medium heat, add kale and watercress, and cook until wilted. Transfer to a colander to drain and cool, pressing gently to remove excess liquid.
  2. Combine spring onions, herbs, ricotta and eggs. Add wilted greens and feta, and season with salt and pepper. Brush a sheet of phyllo pastry with butter and layer another four on top of it, brushing each one well with butter. Place on bottom of dish. Now spoon mixture over the pastry.
  3. Place another 5 buttered layers on top of the greens mixture. Tuck edges of pastry into dish to enclose, brush the top and sprinkle with poppy seeds. Bake for an hour. Serves 8.
