- 2 oranges, unpeeled
- 6 eggs
- 200g caster sugar
- 300g ground almonds
- 1 tsp baking powder
TIP: For a cake that’s perfect for Banters, replace the sugar with xylitol.
1. Preheat oven to 170°C.
2. Put the oranges in a pot and cover with water. Simmer for 1 hour. Drain and cool. Chop the oranges into quarters, discard seeds and place the orange chunks (skin still on) in a blender and purée.
3. Beat the eggs with the sugar until thick. Add the orange purée, ground almonds and baking powder, and mix well.
4. Pour into a prepared baking tin and bake for 30 minutes or until the cake is springy and starts to pull away from the sides of the tin. Do not let it dry out.
5. To serve, dust with icing sugar and top with crème fraîche.
TIP: This cake mellows with a little time and can be prepared up to 48 hours in advance.
