Recipe Ingredients

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 700g extra-lean beef mince
  • salt and pepper
  • 800g canned chopped tomatoes
  • 1 tbsp red-wine vinegar
  • ½ tsp blend of ground cinnamon, ginger and allspice
  • ½ cup butter
  • ⅔ cup all-purpose flour
  • 5 cups fat-free milk
  • ¼ tsp ground nutmeg
  • 3 large eggs, lightly beaten
  • 1 cup grated Parmesan cheese
  • 450g rigatoni

Recipe Directions

1. Preheat oven to 190°C. Heat a pot of water to boiling. Spray a 2,8ℓ baking dish with cooking spray.

2. In a 30cm frying pan, heat oil on medium-high and fry onion for 4 minutes. Add mince and ½ tsp each salt and pepper. Cook for 5 minutes or until browned. Add tomatoes, vinegar and blend of spices. Cook for 15 minutes.

3. In a large pot, melt butter on medium-high. Stir in flour until smooth. Slowly whisk in milk, nutmeg and ¾ tsp salt; simmer for 8 to 10 minutes or until thickened, whisking. Cool for 5 minutes. Stir in eggs and Parmesan. 

4. Cook rigatoni for 2 minutes less than label instructs. Drain. Press half of rigatoni into a baking dish. Spread meat over rigatoni. Layer on remaining rigatoni. Top with sauce. Bake for 45 minutes or until top is browned and edges are bubbly.


EACH SERVING About 2 300kJ, 31g protein, 54g carbohydrate, 23g total fat (12g saturated), 4g fibre, 138mg cholesterol.
