Sesame-studded falafel

Recipe Ingredients

  • 400g canned chickpeas
  • 2 tbsp parsley
  • ¼ cup coriander
  • 4 spring onions
  • 2 cloves garlic
  • 1 tsp salt
  • ½ tsp ground chillies
  • 1 tsp ground cumin
  • 1 tsp baking powder
  • ¼ cup cake flour
  • 2 tbsp sesame seeds
  • olive oil to fry
  • 1 cup Greek yoghurt
  • 2 tbsp tahini
  • ½ crushed garlic clove
  • 2 tbsp lemon juice

Recipe Directions

  1. Drain chickpeas and place in a food processor with herbs, onions, garlic, salt and spices, and process to a coarse paste. Combine with baking powder and flour. Cover and refrigerate for 1 hour.
  2. Place sesame seeds in a shallow bowl, roll tablespoons of mixture into balls and roll in seeds. Heat oil (8cm deep) in a pan and add falafel – about 3 at a time. Remove from pan and drain.
  3. To make the tahini yoghurt, whisk together the yoghurt, tahini, garlic and lemon juice. Serve falafel in pita breads or lettuce cups with tahini yoghurt. Makes 16.
